  2. 2

Heat the oil in a large non stick frying pan over a medium-high heat. Fry the potato for 8 minutes, turning, until golden at the edges. Add the onion and jalapeño and cook for 3 minutes.

  3. 3

Stir in the taco seasoning mix with 2 tbsp water and cook for 1 minute. Warm your ready made refried beans (see the base recipe) in a small pan until steaming hot all the way through.

  4. 4

Reduce the heat to low. Pour the beaten eggs over the potatoes and stir gently for 2 minutes until just set but still soft.

    2 min
  5. 5

Warm the corn tortillas in a dry pan for 30 seconds each side. Spread with refried beans, spoon over the egg and potato, and finish with coriander and a squeeze of lime.

Tips

  • Par boiling the potatoes first means they crisp quickly and are creamy inside without long frying.
  • Take the pan off the heat when the eggs look slightly wet. They finish cooking on the way to the table.
  • Add a spoonful of salsa taquera for authentic breakfast heat.
  • Use a non stick pan so the eggs do not catch on the potato.

Storing and freezing

Eat straight away. Keep any leftover filling in the fridge for up to 2 days and reheat until steaming hot all the way through.

Can I make them dairy free and gluten free?

Yes. The eggs, potatoes, taco seasoning and refried beans (when made with oil) are dairy free and gluten free. Use gluten free corn tortillas.

Can I add chorizo?

Yes. Fry 100 g of chopped cooked chorizo with the potatoes. It makes the tacos a little richer and spicier.
