Method
- 1
Get a charcoal barbecue to white-grey hot, or a gas barbecue on high. Prick the aubergines in a few places. Put the aubergines and whole peppers straight on the bars or coals.
- 2
Turn the peppers every 3 to 4 minutes for 12 to 15 minutes until blackened and collapsing all over. Turn the aubergines for 20 to 25 minutes until the skin is charred and the insides are completely soft.
20 min - 3
Put the peppers in a bowl and cover with a plate for 10 minutes to loosen the skins. Leave the aubergines until cool enough to handle.
- 4
Brush the courgettes and onion wedges with 1 tablespoon of the oil and grill over medium heat for 3 to 4 minutes a side until striped and tender.
- 5
Peel the peppers, remove the seeds and tear into strips. Peel the aubergines, keeping the smoky flesh, and tear it roughly.
- 6
Whisk the remaining oil with the lemon juice, vinegar, garlic, salt and chilli flakes. Arrange all the vegetables on a platter, spoon over the dressing, and scatter with the herbs. Serve warm or at room temperature.
