Method

  1. 1

Mix the flour, yeast, sugar and salt in a large bowl. Add the warm milk and butter and mix to a soft, sticky dough. Knead for 8 to 10 minutes until smooth and stretchy.

    10 min
  2. 2

Cover and leave in a warm place for 1 hour, until doubled in size.

    60 min
  3. 3

Dust the worktop with semolina. Pat the dough out gently to 2 cm thick. Do not roll it thin. Cut out rounds with an 8 cm cutter and pat the scraps back together for more.

  4. 4

Lay the muffins on a tray dusted with semolina, dust the tops too, cover loosely and leave for 30 minutes until puffy.

    30 min
  5. 5

Heat a heavy frying pan or griddle over a low to medium heat, with no oil. Cook the muffins in batches for about 7 minutes each side, until deep golden and well risen. If they colour too fast, turn the heat down.

    7 min
  6. 6

Check the middle is cooked. If it still feels doughy, finish the muffins on a tray in the oven at 180°C (160°C fan) for 5 minutes.

  7. 7

Cool on a wire rack for 15 minutes. Split with a fork, not a knife, for the nooks and crannies, then toast and butter.
