Method

  1. 1

Put the apples, sugar, cinnamon, raisins, lemon juice and 3 tablespoons of water in a pan. Cook over a medium heat for 8 minutes until the apples are tender but still holding shape and the juices are syrupy.

  2. 2

Cool the filling for 10 minutes so it does not soften the tortillas.

  3. 3

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 10 seconds a side.

  4. 4

Spoon about 3 tablespoons of filling onto the lower third of each tortilla. Fold in the sides and roll up tightly. Secure with a cocktail stick if needed.

  5. 5

Heat the oil in a deep frying pan to 175C. Fry the chimichangas, 2 or 3 at a time, for 2 minutes a side until deep golden.

  6. 6

Drain on kitchen paper, dust with a little extra cinnamon and sugar, and serve hot with ice cream.

Tips

  • Cool the filling first or the tortillas tear and go soggy.
  • Drain the cooked apples slightly if very juicy.
  • Roll tightly and fry seam side down first to seal.
  • Be careful with hot oil. Keep children away and never leave the pan unattended.

Storing and freezing

Best eaten fresh. Keep the apple filling in the fridge for up to 3 days. Leftover chimichangas keep for 1 day and re-crisp in a hot oven for 8 minutes.

Questions

Can I bake these instead?

Yes. Brush with a little oil or melted dairy free spread and bake in a hot oven for about 15 to 18 minutes, turning once, until crisp and golden.

What other fillings work?

Pears, peaches, banana or cooked berries all work. Add a spoonful of cajeta or dulce de leche for a richer filling, though that is not dairy free.

Is this vegan?

Yes, as written with oil, dairy free ice cream and vegan flour tortillas. Check your sugar and ice cream labels if you follow a strict vegan diet.
