Method

  1. 1

Mix the sliced mushrooms with your ready made carne asada marinade (see the base recipe) in a bowl. Leave for 30 to 60 minutes, stirring once.

    40 min
  2. 2

Heat a large frying pan or griddle until very hot with the oil. Cook the mushrooms in 2 batches for 5 to 6 minutes, until charred at the edges and the liquid has gone.

    6 min
  3. 3

Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.

  4. 4

Fill each tortilla with mushrooms, top with pico de gallo (see the base recipe) and a slice of avocado, and serve with lime.

Tips

  • Cook mushrooms in batches. A crowded pan steams them and they go grey instead of browned.
  • Wait until the liquid evaporates before taking them off, for a meaty bite.
  • Add a spoonful of salsa macha at the table for depth.

Storing and freezing

Keeps in the fridge for up to 2 days if cooled within 1 to 2 hours. Reheat until steaming hot all the way through. Freezing makes mushrooms soft.

Questions

Is this really vegan?

Yes. The marinade, mushrooms, tortillas, pico de gallo and avocado are all plant based. Check your corn tortillas for any animal fat if you buy them in a shop.

Can I use other mushrooms?

Yes. Oyster, king oyster or large flat mushrooms all take the marinade well. Slice them thickly so they hold their shape on the grill.
