Questions

What kind of kimchi should I use?

Well fermented napa cabbage kimchi works best, either homemade or from a shop. It should smell tangy and sour.

Can I use bacon or pork belly?

Yes. Pork belly slices are traditional and richer. Bacon will add extra saltiness, so cut back on the sauce.

Is shop bought kimchi gluten free?

Not always. Some brands use wheat flour or soy sauce. Check the label or use your homemade kimchi.
