Method

  1. 1

Make sure your gochujang marinade is ready (see the base recipe). Heat the oven to 220°C (200°C fan).

  2. 2

Toss the sweet potato with 2 tbsp of the olive oil and a pinch of salt on a large tray. Roast for 20 minutes, turning once, until golden at the edges.

  4. 4

Tip everything into a large frying pan over a medium heat, pour over the gochujang marinade and stir for 2 minutes until sticky and glossy.

  5. 5

Fry the eggs in a second pan with the last tbsp of oil for 3 minutes, until the whites are set and the yolks are runny.

  6. 6

Divide the hash between 4 plates. Top with the eggs and avocado, then scatter with spring onions and sesame seeds.

Tips

  • Cut the sweet potato into even cubes so they roast at the same speed.
  • Do not crowd the tray or the potato steams. Use two trays if needed.
  • Cook the eggs until the whites are fully set and the yolks as runny as you like.

Storing and freezing

Store the hash without the eggs in the fridge for up to 2 days and reheat until steaming hot. Cook fresh eggs each time.

Questions

Can I make the hash ahead?

Yes. Roast the vegetables the day before and keep them in the fridge. Finish in the pan with the marinade and fry fresh eggs just before serving.

What can I swap for the avocado?

Try wilted spinach, sliced tomato or a spoon of dairy free yoghurt, which cools the heat.

Is it a breakfast or a dinner?

Both. It is a hearty brunch dish, and with a green salad it makes a quick vegetarian supper.
