Method
- 1
Take the chops out of the fridge 15 minutes before cooking and season both sides with the salt.
- 2
Heat the oil in a large frying pan over a medium high heat. Sear the chops for 3 minutes a side until deep golden. Lift them onto a plate.
6 min - 3
Pour your ready made easy red mole (see the base recipe) into the pan with the water, scraping up the browned bits, and simmer for 3 minutes.
3 min - 4
Return the chops and juices to the pan, turn them in the sauce and cook for 5 to 6 minutes more, until just cooked through, at least 63C in the middle, with no pink juices.
6 min - 5
Rest the chops for 3 minutes. Serve with the sauce spooned over, sesame seeds, your ready made escabeche (see the base recipe) and rice.
Tips
- Dry the chops well with kitchen paper before searing so they brown rather than steam.
- Do not overcook. Pork chops are done when juices run clear and the meat is just firm.
- Use the escabeche juice sparingly, a teaspoon on each plate lifts the sweet mole.
Storing and freezing
Keeps 2 days in the fridge, covered. Reheat gently in the sauce until steaming hot all through. Pork chops are best fresh, so freeze only the leftover mole.
Questions
Can I use boneless pork?
Yes, boneless loin steaks cook in about 4 minutes a side. Check they reach 63C in the middle and rest before serving.
Is the escabeche optional?
It is not essential, but the sharp pickle balances the rich, slightly sweet mole. A squeeze of lime is the simplest swap.
What goes well with this?
Rice, refried beans or warm corn tortillas. A simple green salad keeps the plate fresh.
