Spoon your ready made creamy avocado salsa (see the base recipe) onto a platter. Set the cauliflower on top and scatter with pumpkin seeds and coriander. Carve at the table.

Tips

  • Parboiling and drying the head gives a tender centre and a roasted, not steamed, outside.
  • Glaze in two coats. The first soaks in and the second caramelises into a dark finish.
  • Leftover florets are great in tacos or tossed through a grain salad.

Storing and freezing

Keeps in the fridge for up to 3 days. Reheat at {t180} for 15 minutes until steaming hot. Keep the avocado salsa in a separate covered tub and use within 24 hours.

Questions

Can I use florets instead of a whole head?

Yes. Toss 900 g of florets in the glaze and roast at {t220} for 25 to 30 minutes, turning once.

Can I make it ahead?

Parboil and glaze it up to a day ahead, chill, then roast just before serving.

Is it filling enough for a main?

With rice or warm tortillas and beans on the side, yes. As a side dish it feeds 6.
