Method

  1. 1

Warm your ready made queso (see the base recipe) in a pan over a low heat, stirring, until steaming hot and smooth. Add a splash of milk if it has thickened.

  2. 2

Stir your ready made chipotle adobo sauce (see the base recipe) into the queso until smooth. Taste and add more for heat.

  3. 3

Heat the black beans in a small pan for 3 to 4 minutes until steaming hot all the way through.

    3 min 30 s
  4. 4

Mix the tomatoes, spring onions and lime juice in a bowl.

  5. 5

Spread your ready made tostada wedges (see the base recipe) on a large platter or tray. Spoon over the beans.

  6. 6

Pour the chipotle queso over the top and finish with the tomato mixture, avocado, jalapeños and coriander. Serve at once.

Tips

  • Pour the warm queso over the chips just before serving. The chips go soft within minutes otherwise.
  • For crowd nachos, serve the queso in a bowl in the middle so people dip.
  • Warm the chips in the oven for 5 minutes first for extra crunch.

Storing and freezing

Best eaten at once. The chipotle queso keeps in the fridge for 3 days and reheats gently with a splash of milk, stirring until steaming hot. Do not freeze.

Can I make the queso ahead?

Yes. Make and chill it up to 3 days ahead, then reheat gently with a splash of milk.

Can I add meat?
