0 min 20 s - 2
Add your ready made korma base (see the base recipe) and the water. Bring to a very gentle simmer for 5 minutes.
5 min - 3
Slide in the cod chunks. Do not stir. Cover and cook for 5 minutes, until the fish is opaque and flakes easily.
5 min - 4
Lay the spinach on top, cover for 1 minute until wilted, then fold in very gently.
1 min - 5
Add the lemon juice, salt and coriander, and serve with rice.
Tips
- Fish breaks up easily. Shake the pan rather than stirring once the cod is in.
- Pat the cod dry and season lightly before adding. It stops excess water thinning the sauce.
- Try salmon, haddock or firm hake. Adjust the time to the thickness of the fillet.
Storing and freezing
Best eaten fresh. Cool and chill leftovers within 1 hour, eat within 1 day, and reheat until steaming hot. Do not freeze cooked fish curry.
Questions
Can I use frozen cod?
Yes. Defrost it fully in the fridge first and pat it dry, otherwise it waters down the sauce.
Can I use smoked haddock?
Yes, but it is salty. Skip the added salt and taste before adding any.
Is the sauce thick enough with fish?
Fish releases a little water. If the sauce looks thin, lift out the fish and simmer the sauce for 3 minutes before putting it back.
