Method

  1. 1

Mix the chicken with your ready made tikka marinade (see the base recipe) in a bowl. Cover and chill for at least 1 hour, or up to 8 hours.

  2. 2

Heat the oven grill to its highest setting, or heat the oven to 240°C (220°C fan). Spread the chicken on a lined baking tray in a single layer.

  3. 3

Grill or roast for 12 to 15 minutes, turning once, until charred at the edges and cooked through. The juices should run clear.

Tip the chicken into the sauce, with any juices from the tray, and simmer for 3 minutes.

Stir in the lemon juice, scatter over the coriander and serve with rice or naan.

Tips

  • Do not crowd the tray. Chicken that touches steams instead of charring.
  • Cook the marinated chicken until you see dark spots at the edges. The char is what makes it taste like tikka.
  • Never use leftover raw marinade as a sauce. Discard it.

Storing and freezing

Cool within 1 to 2 hours, keep in the fridge for up to 3 days, or freeze for 2 months. Reheat until steaming hot all the way through.

Questions

Can I cook the chicken in a pan?

Yes. Fry it in two batches over a high heat for 6 to 8 minutes, until browned and cooked through.

Is tikka marinade dairy free?

The base marinade is yoghurt based, so this dish is not dairy free. Use a coconut yoghurt marinade if you need dairy free.

How spicy is it?

Mild to medium. The tikka adds warmth but the korma base keeps it creamy and gentle.
