Method

  1. 1

Heat the oven to 220°C (200°C fan). Line two baking trays with baking paper and brush lightly with 1 tbsp of the oil.

  2. 2

Spoon your ready made churro dough (see the base recipe) into a piping bag with a large star nozzle. Pipe 12 cm lengths onto the trays, 3 cm apart. Brush the tops with the remaining oil.

  3. 3

Bake for 20 to 25 minutes until deep golden and crisp, turning the trays halfway.

  4. 4

Meanwhile, warm the coconut milk in a small pan until steaming. Take off the heat, add the chocolate and leave 2 minutes, then stir until glossy.

  5. 5

Mix the sugar and cinnamon on a plate. Roll the hot churros in it and serve with the chocolate dip.

Tips

  • Baked churros are crisp outside and softer inside than fried ones; brush well with oil for colour.
  • Pipe with the biggest star nozzle you have so the ridges hold their shape in the oven.
  • Shake the tin of coconut milk before opening so the cream and liquid are mixed.

Storing and freezing

Best the day they are baked. Keep leftovers in an airtight tin for 1 day and re-crisp for 5 minutes in a {t180} oven.

Questions

Why are baked churros different from fried?

Frying puffs and crisps the dough quickly. Baking gives a drier, crunchier stick with less rise, but it is easier and needs no deep oil.

Can I use an air fryer?

Yes. Air fry in batches at 190 degrees C for 8 to 10 minutes, turning once, until golden.

Is the chocolate dip vegan?

Yes, when you use a dairy free dark chocolate and coconut milk. Check the chocolate label for milk traces and nut warnings.
