Method
- 1
Put the flour, yolks, egg, soured cream, caster sugar, vodka and salt in a bowl. Mix, then knead for 10 minutes until the dough is smooth and elastic.
- 2
Beat the dough on the worktop with a rolling pin for 3 minutes, folding it over each time. This traps the air that makes the blisters. Wrap and rest for 30 minutes.
30 min - 3
Roll out a quarter of the dough until paper thin, 1 to 2 mm. Cut strips 3 cm wide and 10 cm long. Cut a slit down the middle of each and pull one end through the slit to make a loose twist.
- 4
Heat the oil in a deep, heavy pan to 180 C, or until a scrap of dough rises and sizzles at once. Always keep the oil to a depth of 5 cm and never leave it unattended.
- 5
Fry 4 or 5 pieces at a time for 30 to 40 seconds each side, until pale golden and blistered.
0 min 40 s - 6
Lift out and drain on kitchen paper. Cool, then dust thickly with icing sugar. They keep in a tin for 3 days.
