Method
- 1
Cut the tortillas into sixths and spread them on a tray to dry out for 10 minutes.
10 min - 2
Heat 3 tbsp oil in a large frying pan over a medium high heat and fry the tortilla pieces in batches for 2 to 3 minutes until crisp and golden. Drain on kitchen paper.
3 min - 3
Warm your ready made easy red mole (see the base recipe) in the wiped pan with the water. When it bubbles, tip in the chips and fold for 1 minute until coated but still crisp at the edges.
1 min - 4
Fry the eggs in the remaining oil in a second pan for 2 minutes until the whites are set and yolks soft.
2 min - 5
Divide the chilaquiles between plates, top with the eggs, soured cream, queso fresco, onion and coriander. Serve straight away.
Tips
- Use stale or dried tortillas. Fresh ones soak up oil and turn greasy.
- Fold the chips in the sauce for no more than a minute if you like them crunchy. Leave 3 minutes for a softer, porridge-like texture.
- Serve at once. Chilaquiles go soft within minutes.
Storing and freezing
Best straight away. Leftover fried chips keep crisp in an airtight tin for 2 days. Store the mole separately, in the fridge for 3 days, and reheat until steaming hot.
Questions
Can I bake the tortillas instead of frying?
Yes. Brush with oil and bake at 200C for 8 to 10 minutes until crisp. The chips are a little drier but still good.
Are chilaquiles breakfast only?
They are traditionally a breakfast or brunch dish, often made from leftover tortillas, but are good for a quick supper too.
Can I use shop bought tortilla chips?
Yes, choose thick, plain, salted corn chips and skip the frying steps.
