Method
- 1
Divide your ready made bread dough (see the base recipe) into 4 pieces of 150 g. Shape into rounds, flatten to about 12 cm across and place on a lined tray. Cover and prove for 30 minutes.
30 min - 2
Heat the oven to 220°C (200°C fan). Prick the loaves with a fork and bake for 15 to 18 minutes, until golden and hollow sounding underneath. Wrap in a tea towel to keep soft.
16 min 40 s - 3
Mix the lamb with the grated onion, cumin, paprika, 3 tablespoons of your ready made chermoula (see the base recipe) and 1 teaspoon of salt. Shape into 8 small oval patties, about 1.5 cm thick.
- 4
Toss the tomato, cucumber and red onion with 2 tablespoons of chermoula and a pinch of salt to make a quick salad.
- 5
Heat the olive oil in a large frying pan over a medium high heat. Cook the kefta patties for 4 to 5 minutes each side, until browned and cooked through with no pink inside and juices running clear.
9 min - 6
Split the loaves open and fill with the kefta and the salad. Spoon over a little more chermoula and eat straight away.
Tips
- Do not overwork the kefta mixture or it turns tough. Mix only until just combined.
- Cook one tiny piece first and taste for salt and spice before shaping all the patties.
- Use beef or lamb mince with 15 to 20 per cent fat. Leaner mince gives dry kefta.
Storing and freezing
Best eaten straight away. Cooked kefta keeps for 3 days in the fridge and freezes for 3 months. Reheat until steaming hot all the way through. Loaves keep for 1 day or freeze for 1 month.
Questions
What is khobz?
Khobz is the everyday round Moroccan bread, with a crusty outside and soft inside, eaten with every meal. It is often torn rather than cut, and used to scoop up tagines, salads and kefta.
Can I cook the kefta on a barbecue?
Yes. Thread onto flat skewers or cook as patties over a medium barbecue for 4 to 5 minutes per side, until cooked through with no pink inside. Oil the grill well so they do not stick.
Is this dish dairy free?
Yes, it is dairy free, egg free and nut free as written. The chermoula contains herbs, garlic, lemon and spices. It is not gluten free because of the bread.
