Method
- 1
Rub about 50 g of your ready made chermoula (see the base recipe) over the lamb steaks. Cover and marinate in the fridge for at least 1 hour, or up to 6 hours. Keep the remaining chermoula in a clean bowl for serving.
- 2
Heat 1 tablespoon of the olive oil in a frying pan over a medium heat. Add the chickpeas and red onion and cook for 5 minutes until the chickpeas are warm and starting to crisp.
5 min - 3
Add the cherry tomatoes and salt and cook for 2 minutes more, until they just begin to soften. Stir in the spinach until wilted, then take off the heat and add the lemon juice.
- 4
Heat a griddle or heavy frying pan until very hot. Brush with the last tablespoon of oil and cook the steaks for 3 to 4 minutes on each side for pink, or 5 minutes for well done.
3 min 30 s - 5
Rest the lamb for 5 minutes, then slice across the grain.
- 6
Spoon the chickpea salad onto plates, top with sliced lamb and drizzle with the reserved chermoula.
Tips
- Slice the lamb across the grain for tender slices.
- Rest the meat before slicing so the juices stay in.
- Whole steaks can be served pink. Never serve minced lamb pink.
Storing and freezing
Keep the lamb and salad in covered containers in the fridge for up to 2 days. Eat cold or reheat until steaming hot.
