Season with salt and stir in the coriander. Serve with lime wedges.

Tips

  • Cut the potatoes into even cubes so they cook at the same speed and stay whole.
  • Waxy potatoes hold their shape. Floury ones break down and thicken the sauce, which also tastes good.
  • Serve with warm tortillas as a vegan taco filling, or alongside grilled meat.

Storing and freezing

Cool quickly and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. The potatoes freeze acceptably for up to 1 month but go slightly soft.

Questions

What are papas con ejotes?

Papas con ejotes is a Mexican home cooking dish of potatoes and green beans in a tomato based sauce. It is often eaten in tacos, with rice or beside meat during Lent.

Is it vegan?

Yes. The vegetables, oil and tinga sauce are all plant based, provided the sauce was made with vegetable stock as in the base recipe.

Can I add cheese?

Yes. Many families stir in crumbled queso fresco or melted mozzarella at the end, which makes it non vegan but richer.
