Method

  1. 1

Make your ceviche lime marinade (see the base recipe) and chill it. Cut the fish into 1.5 cm cubes.

  2. 2

Put the fish in a glass bowl and pour over 200 ml of the ready made ceviche lime marinade (see the base recipe). Stir gently.

  3. 3

Chill for 15 to 20 minutes until the fish is opaque on the outside and just translucent inside.

  4. 4

Meanwhile mix the tomato, olives, capers, jalapeño and onion in a separate bowl with the olive oil.

  5. 5

Drain a third of the marinade from the fish, then fold in the tomato mixture and parsley.

  6. 6

Taste, add salt only if needed, and serve cold in glasses or on tostadas.

Tips

  • The olives and capers are salty, so go easy on adding extra salt until you have tasted the finished ceviche.
  • Use very fresh white fish such as sea bass or snapper, previously frozen at -20C for at least 24 hours.
  • Add a splash of the olive brine for extra Veracruz flavour, but taste first because it is salty.
  • Serve with plain tostadas, salted crackers or lettuce leaves.

Storing and freezing

Best eaten within 1 hour. Throw away leftovers and any marinade that touched raw fish.

Questions

What makes Veracruz style ceviche different?

Veracruz cooking mixes Spanish and Mexican influences, so the ceviche often includes green olives, capers, olive oil and sometimes parsley and bay, alongside tomato and green chilli.

Can I use pickled jalapeños?

Yes, a spoonful of the brine and a few sliced pickled jalapeños add heat and tang. Reduce the fresh chilli to compensate.

Is this suitable for pregnancy?

No. Raw or cured fish is not recommended in pregnancy. Use poached prawns instead and follow the same method.
