Serve in bowls topped with cabbage, radish, oregano, coriander and lime wedges.

Tips

  • This is the dish to make when the broth and chicken are already in the fridge or freezer.
  • Warm the chicken straight from the fridge in the broth rather than frying it, it stays moist.
  • Finish with plenty of lime. The shredded chicken is mild and loves the acid.

Storing and freezing

Keeps in the fridge for 3 days. Freeze portions for up to 3 months and reheat until steaming hot all the way through.

Questions

Can I use shop bought rotisserie chicken?

Yes, if you have not made the base chicken. Shred it, discard the skin and add it in the last 5 minutes.

Can I make it with frozen base and chicken?

Yes. Defrost both in the fridge overnight, then follow the recipe.

Is it dairy free?

Yes. Nothing in the soup contains dairy as long as you skip any crema or cheese at the table.
