Fold in the coriander, taste and add salt, then dust with chilli powder and serve very cold.

Tips

  • Jicama is a crunchy Mexican root vegetable sold in some supermarkets and Latin shops. Swap for kohlrabi, radish or firm pear if you cannot find it.
  • Cut everything into similar sized 1 cm cubes so the salad looks neat and eats easily.
  • Chill the watermelon before mixing so the salad stays cold.
  • A pinch of chilli powder on top gives the classic Mexican street fruit finish.

Storing and freezing

Eat within a few hours. It keeps for 1 day in the fridge but the watermelon weeps and the jicama softens.

Questions

What does jicama taste like?

Jicama is crisp and slightly sweet, like a cross between an apple and a water chestnut. It stays crunchy even in acid, which makes it ideal for ceviche.

Can I use other fruit?

Yes. Mango, cucumber, pineapple and cantaloupe melon all work with the same marinade.

Is this vegan?

Yes. It is vegan, gluten free, dairy free, egg free and nut free, and it does not rely on added sugar.
