Method

  1. 1

  3. 3

Mix the cucumber, tomato, red onion and jalapeño in a large bowl. Pour over 180 ml of the ready made ceviche lime marinade (see the base recipe).

  4. 4

Chill for 15 minutes so the vegetables take on the sharp, spicy flavour.

  5. 5

Gently fold in the avocado and coriander and taste. Add more salt or a squeeze of lime if needed.

  6. 6

Serve in glasses or bowls straight away, with tostadas or corn chips if you like.

Tips

  • Salt the cucumber for 5 minutes and drain it before marinating, so it stays crisp and does not water down the marinade.
  • Use ripe but firm avocados. Soft ones turn to paste when you stir.
  • Add 1 tin of drained hearts of palm, sliced into coins, for a more seafood-like texture.
  • Serve in small glasses or on cucumber slices for a light starter.

Storing and freezing

Keep for up to 1 day in the fridge in a covered bowl. The avocado will darken a little, so squeeze over extra lime if keeping.

Questions

Is this ceviche vegan?

Yes. The marinade has only lime juice, chilli, coriander, garlic and salt, and the rest is vegetables, so the dish is vegan, gluten free, dairy free, egg free and nut free.

Can I make it ahead?

Mix the cucumber, onion and marinade up to 1 hour ahead and add the avocado just before serving. After 24 hours the vegetables go soft.

What else can I marinate?

Mango, hearts of palm, mushrooms, jicama, cooked chickpeas and thinly sliced courgette all work well in the same marinade.
