Method

  1. 1

Heat the oven to 220°C (200°C fan). Heat 1 tablespoon of the oil in a pan and fry the onion and pepper for 6 minutes until soft.

    6 min
  2. 2

Add the cumin, the pollo deshebrado (see the base recipe), the carnitas (see the base recipe) and the chopped tomatoes. Simmer for 8 minutes until thick and no longer wet, then cool for 5 minutes. Season.

    8 min
  3. 3

Warm the flour tortillas (see the base recipe) for 15 seconds each side so they roll without cracking.

  4. 4

Divide the filling and cheese between the tortillas. Fold in the sides and roll up tightly. Place seam side down on a lined tray.

  5. 5

Brush all over with the remaining oil. Bake for 15 to 18 minutes, turning once, until golden and crisp.

    16 min 40 s
  6. 6

Serve whole with the soured cream and a spoonful of salsa.

Tips

  • Make sure the filling is thick, not wet, or the chimichangas will tear and go soggy.
  • Brush well with oil all over for a crisp, fried-looking crust without deep frying.
  • Serve with guacamole and rice for a full plate.

Storing and freezing

Chill cooked chimichangas within 1 hour. Keeps up to 2 days. Reheat at 200C (180C fan, gas 6) for 12 to 15 minutes until steaming hot all the way through.

Questions

Can I fry them instead of baking?

Yes. Shallow fry for 2 to 3 minutes each side in 1 cm of oil at around 180 degrees until golden. Baking uses less oil and is easier for a family batch.

Can I freeze them?

Yes. Freeze unbaked on a tray, then bag. Bake from frozen at 190C (170C fan, gas 5) for 30 minutes until golden and hot all the way through.

Can I use gluten free wraps?

Use large gluten free wraps and warm them first. They crack more easily, so do not overfill.
