Method
- 1
Heat the oven to 200°C (180°C fan). Mix the chipotle adobo sauce (see the base recipe) with the orange juice and olive oil in a small bowl.
- 2
Line a baking tray with baking paper. Lay the salmon on it and brush the chipotle mixture over the top and sides. Use clean brushes and do not reuse any glaze that has touched raw fish.
- 3
Bake for 10 to 12 minutes, until the salmon is opaque and flakes easily.
11 min - 4
Toss the cabbage with a squeeze of lime and a pinch of salt.
- 5
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 to 30 seconds a side.
- 6
Flake the salmon into big pieces and divide between the tortillas. Top with cabbage, lime crema (see the base recipe) and coriander, and serve with lime wedges.
Tips
- Remove the salmon from the oven as soon as it flakes. It carries on cooking from the heat of the tray.
- Chipotle is smoky and hot. Use the full amount for a punchy flavour, or 2 tbsp for milder tacos.
- Pat the salmon dry before brushing, so the glaze sticks.
- Squeeze lime over the cabbage just before serving to keep it crisp.
Storing and freezing
Keeps in the fridge for up to 1 day. Cool within 1 to 2 hours and eat cold in a salad, or reheat gently until steaming hot all the way through. Do not freeze.
Questions
Can I use a different fish?
Yes. Trout, sea bass, cod or haddock fillets all work, with the cooking time adjusted for thickness.
Can I make these dairy free?
Yes. Skip the lime crema and top with guacamole or a squeeze of lime instead. The rest of the recipe is dairy free.
Are these tacos gluten free?
Yes. Salmon, chipotle glaze, cabbage and masa harina tortillas contain no gluten, egg or nuts. The crema contains dairy.
