Method
- 1
Toss the cabbage with half the lime juice and a pinch of salt. Set aside. Warm your corn tortillas (see the base recipe) wrapped in a clean tea towel in a low oven or on a dry hot pan.
- 2
Heat the oil in a wide frying pan over a high heat. Add the prawns and garlic and cook for 2 minutes, turning once.
2 min - 3
Pour in 250 ml of your ready made red enchilada sauce (see the base recipe). Simmer for 1 to 2 minutes until the prawns are pink and glossy.
1 min 30 s - 4
Add the rest of the lime juice and take off the heat.
- 5
Fill the warm tortillas with cabbage and prawns. Top with pickled red onions and coriander and serve with lime wedges.
Tips
- Dry the prawns well before they hit the pan so they sizzle and colour.
- Use two tortillas stacked together for each taco if they are thin, as street taquerias do.
- Put the tortillas in a tea towel as soon as they come off the heat so they steam and stay soft.
- Add sliced avocado or a drizzle of crema if you want a richer taco.
Storing and freezing
Cook the prawns just before eating. Keep any leftover filling in the fridge for up to 1 day and reheat until piping hot, once only.
Questions
Can I use frozen cooked prawns?
Yes. Defrost fully and warm them in the sauce for 1 minute only. Cooking them longer makes them rubbery.
Are these tacos gluten free?
Yes, with corn tortillas from masa harina and a sauce made with gluten free stock. Always check any bought tortillas, as some contain wheat.
Can I use fish instead?
Yes. Cut firm white fish into strips, fry for 3 minutes and add the sauce for the final minute.
How do I make them hotter?
Add a chopped fresh chilli to the cabbage or a spoonful of salsa macha to each taco.
