  2. 2

Peel off the skins, remove the seeds and slice the flesh into strips.

  3. 3

Heat the oil in a frying pan over a medium heat. Cook the onion for 6 minutes until soft and golden, then add the poblano strips and cook for 2 minutes. Season with salt.

  5. 5

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  6. 6

Spread beans down the middle of each tortilla and top with the rajas, cheese and coriander. Fold in the sides and roll up.

  7. 7

Toast the burritos seam side down in a dry pan for 1 to 2 minutes a side until the cheese melts. Serve with lime.

Tips

  • Charring and steaming the poblanos makes the skins slide off easily. Do not rinse them under the tap or you lose flavour.
  • If you cannot find poblanos, green peppers with a little jalapeno give a similar flavour.
  • Keep the filling relatively dry so the burritos do not leak.
  • Add a spoonful of salsa verde inside for more tang.

Storing and freezing

Keep wrapped burritos in the fridge for up to 2 days or freeze for up to 2 months. Reheat until steaming hot all the way through.

Questions

Can I make these vegan?

Yes. Use a dairy free melting cheese or leave it out. Roasted poblanos, onions, refried beans and flour tortillas are all vegan.

What are rajas?

Rajas are strips of roasted poblano pepper, often cooked with onion, a favourite filling across Mexico.

How spicy are poblanos?

Poblanos are usually mild, though a few can be hot. Taste a small piece of the roasted flesh and add jalapeno if you want heat.
