Method

  1. 1

Warm the mole poblano (see the base recipe) in a pan with the shredded chicken (see the shredded chicken base recipe) for 6 minutes until thick, not runny, and steaming hot all the way through.

    6 min
  2. 2

Warm the cooked rice in a covered pan with a splash of water until steaming hot.

  3. 3

Warm the flour tortillas (see the base recipe) in a dry pan for 15 seconds a side until soft and flexible.

  4. 4

On each tortilla, spoon a line of rice, mole chicken, cheese and lettuce, leaving the top and bottom edges clear. Fold the sides in, then roll up tightly.

  5. 5

Heat the oil in a frying pan over a medium heat and sear each burrito seam side down for 2 minutes, then turn for 2 minutes more until golden.

    4 min

Tips

  • Use thick, not runny, filling so the burrito does not leak or go soggy.
  • Warm the tortilla well. A cold one cracks when rolled.
  • Searing seam side down seals the burrito shut.

Storing and freezing

Wrap tightly and keep in the fridge for up to 2 days or freeze for up to 2 months. Reheat until steaming hot all the way through.

Questions

Do burritos go with mole?

Burritos come from northern Mexico, and mole is from Puebla and Oaxaca, so this is a modern fusion rather than a classic. It works because the sauce is thick and rich, which suits a wrapped filling.

Can I freeze them?

Yes. Wrap each burrito in baking paper and foil and freeze for up to 2 months. Defrost overnight in the fridge and reheat in a covered dish at {t180} for 25 minutes.
