  4. 4

Warm your ready made refried beans (see the base recipe) in a small pan with a splash of water until steaming hot all the way through. Warm the tortillas in a dry pan for 20 seconds each side.

Tips

  • Parboil the potatoes so they finish in the pan, crisp outside and fluffy inside.
  • Do not overfill. About 4 spoonfuls per burrito makes a neat roll.
  • Wrap burritos in foil to keep them warm for packed lunches.
  • Add a spoonful of salsa ranchera inside for extra juiciness.

Storing and freezing

Wrap cooled burritos in foil and keep in the fridge for up to 3 days. Freeze for up to 2 months, then reheat from frozen in a {t180} oven for 30 minutes until steaming hot all the way through.

Questions

Are these burritos vegetarian?

Yes, if your refried beans are made with oil and not lard and your cheese is vegetarian. Potatoes, vegetables and spices contain no meat.

Can I make them vegan?

Yes. Leave out the cheese, use oil based refried beans and check the tortillas. A spoonful of guacamole adds creaminess.

Can I freeze them?

Yes. Wrap each burrito tightly in baking paper and foil and freeze for up to 2 months. Reheat from frozen in a hot oven until steaming hot all the way through.
