Method

  1. 1

Heat the oven to 200°C (180°C fan). Lightly oil a large baking dish.

  2. 2

Heat the oil in a small pan and cook the onion for 4 minutes until soft. Stir into the refried beans and warm until steaming hot.

    4 min
  3. 3

Warm the flour tortillas in a dry pan for 15 seconds each side so they roll without cracking.

  4. 4

Put a line of the bean mixture and a handful of cheese on each tortilla. Fold in the ends and roll up tightly. Place seam side down in the dish.

  5. 5

Pour your ready made salsa verde (see the base recipe) over the burritos, covering them evenly, and scatter over the remaining cheese.

  6. 6

Bake for 15 to 20 minutes, until bubbling and golden. Drizzle with soured cream, scatter with coriander and serve.

    18 min

Tips

  • Roll tightly and place seam side down so the burritos do not unravel in the oven.
  • Cover the tortillas fully with sauce or the exposed edges will dry and harden.
  • Add rice or sweetcorn to the filling to stretch it further.

Storing and freezing

Cool within 2 hours and keep up to 2 days in the fridge. Reheat covered in a hot oven until steaming hot all the way through.

Questions

Can I make these dairy free?

Yes. Use a dairy free cheese and dairy free soured cream alternative, and check the refried beans were made with oil, not lard.

Can I freeze them?

Yes. Freeze the rolled burritos before saucing, wrapped tightly, for up to 2 months. Thaw overnight, add the sauce and bake.

Can they be gluten free?

Yes, with gluten free flour tortillas or corn tortillas, although corn tortillas may crack when rolled. Warm them well first.
