Method

  1. 1

Heat 200°C (180°C fan). Heat the oil in a large frying pan over a medium-high heat. Cook the turkey mince for 6 minutes, breaking it up, until it is cooked through with no pink.

  2. 2

Add the onion and garlic and cook for 4 minutes. Stir in the cumin, oregano and 1 tsp salt, and cook for 1 minute. Take off the heat.

    5 min
  3. 3

Warm the flour tortillas (see the base recipe) in a dry pan or microwave to make them pliable. Spread each with about 75 g of your ready made refried beans (see the base recipe), then spoon on a quarter of the turkey.

  4. 4

Fold in the sides and roll up tightly. Put seam side down in a baking dish.

  5. 5

Pour your ready made green enchilada sauce (see the base recipe) over the burritos and scatter with the cheese. Bake for 15 minutes until bubbling and the cheese has melted.

    15 min
  6. 6

Scatter with coriander and serve with a knife and fork.

Tips

  • Warm the tortillas well to stop them tearing. Use large burrito size tortillas, about 25 cm.
  • Do not overfill. Four generous but tidy burritos fit the dish better than three bursting ones.
  • Make sure the mince has no pink before filling. Turkey must be cooked through.
  • Add a handful of cooked rice to the filling for a bigger burrito.

Storing and freezing

Cool within 1 hour and keep covered in the fridge for up to 2 days. Reheat until steaming hot all the way through. Freeze unbaked burritos with the sauce on the side for up to 1 month.

Questions

What does ahogado mean?

It means drowned, referring to the burritos being covered in sauce and baked, so you eat them with a knife and fork.

Can I use chicken mince?

Yes. Chicken mince works in the same way and takes the same time.

How do I make them gluten free?

Use large gluten free wraps and check labels on the beans and sauce. The sauce is gluten free if made with gluten free stock.

Are the burritos spicy?

They are mild to medium. Add a little chopped fresh jalapeño to the filling for more heat.
