Method

  1. 1

Heat the oven to 200°C (180°C fan). Put the sweet potato, onions, peppers and corn on a large roasting tray. Toss with the olive oil, smoked paprika and a good pinch of salt.

  2. 2

Nestle the chicken thighs among the vegetables, skin side up. Season the chicken with salt. Roast for 25 minutes.

  3. 3

Brush the chicken generously with half of your ready made BBQ sauce (see the base recipe). Return to the oven for 15 minutes.

    15 min
  4. 4

Brush with the rest of the sauce and roast for 10 minutes more, until the skin is sticky, the vegetables are tender, and the chicken is cooked through with juices running clear.

    10 min
  5. 5

Rest for 5 minutes, then spoon the juices over and serve straight from the tray.

Tips

  • Use a big enough tray so nothing is crowded. If the vegetables overlap they steam instead of roast.
  • Brush the sauce on only in the last 25 minutes, as the sugar will burn if it goes in too early.
  • Keep a little sauce back in a clean bowl for serving if you want extra, and never use sauce that has touched raw chicken.

Storing and freezing

Keeps 3 days in the fridge, cooled within 2 hours. Reheat in a hot oven until steaming hot all the way through.

Questions

Can I use chicken breast instead?

Yes, but it dries out faster. Use bone in breasts and check they are cooked through at 75C after about 35 minutes. Thighs stay juicier.

Can I use other vegetables?

Yes. Butternut squash, potatoes, courgettes and carrots all roast well. Cut the harder vegetables smaller so they cook in the same time.

Is this dish gluten free?

Yes. The BBQ sauce is gluten free, and the rest are plain ingredients. It is also dairy free, egg free and nut free.
