Method
- 1
Heat the oven to 220°C (200°C fan). Pat the wings completely dry with kitchen paper, as dry skin is what makes them crisp.
- 2
Mix the baking powder, smoked paprika, garlic granules and salt in a large bowl. Toss the wings in it until evenly coated.
- 3
Lay the wings on a wire rack set over a baking tray, skin side up, with space between them. Bake for 40 minutes, turning once halfway, until golden and crisp.
40 min - 4
Warm your ready made BBQ sauce (see the base recipe) in a small pan for 3 minutes until hot.
3 min - 5
Toss the hot wings in the sauce until well coated, then return to the rack and bake for 8 to 10 minutes more, until the glaze is sticky. Check the thickest wing is steaming hot and the juices run clear.
9 min - 6
Scatter over the spring onions and sesame seeds. Serve with napkins.
Tips
- Check your baking powder says gluten free on the pack. Some brands contain wheat starch.
- Add the sauce only at the end. Sauce put on too early burns before the chicken is cooked.
- Keep a little sauce back in a clean bowl for dipping. Do not dip into sauce that has touched raw chicken.
Storing and freezing
Keeps 2 days in the fridge once cooled within 2 hours. Reheat in a hot oven for 10 to 12 minutes until steaming hot all the way through.
Questions
Why add baking powder to the wings?
It helps the skin dry out and brown, so you get a fried style crunch from the oven. Use baking powder, not bicarbonate of soda, which tastes soapy.
Can I cook these in an air fryer?
Yes. Cook the coated wings at 200C for 22 to 25 minutes, shaking halfway, then toss in warm sauce and air fry for 3 minutes more.
Are the wings gluten free and dairy free?
Yes, with gluten free baking powder. The BBQ sauce is gluten free, dairy free, egg free and nut free. Always check labels on the other items.
