Method
- 1
Heat the oven to its highest setting, usually 240°C (220°C fan), with a large baking tray or pizza stone inside to heat up for at least 15 minutes.
- 2
Divide your ready made pizza dough (see the base recipe) into 4 balls. On a floured surface, roll or stretch each one into a thin oval about 25 cm long.
- 3
Lay the first base on a sheet of baking parchment and spread with a quarter of your ready made hummus (see the base recipe), leaving a 1 cm border.
- 4
Scatter over the peppers, olives and onion, drizzle with a little olive oil and sprinkle with oregano.
- 5
Slide the parchment with the pizza on to the hot tray and bake for 8 to 10 minutes, until the edge is golden and puffed. Repeat with the other bases.
9 min - 6
Toss the rocket with the lemon juice, scatter over the hot pizzas and serve immediately.
Tips
- Roll the dough thinly. Hummus is quite heavy, so a thin base keeps the pizza crisp.
- Keep the topping light. Too many wet toppings will steam the base.
- Add crumbled feta or sliced halloumi for a vegetarian, non-vegan version.
Storing and freezing
Best eaten fresh. Keep leftover slices in the fridge for up to 2 days and reheat in a hot oven for 8 minutes until steaming hot all the way through. Do not freeze with rocket.
Questions
Can I use shop bought dough?
Yes. Use ready made pizza dough or 4 small naan or flatbreads. Check the label if you need it vegan or dairy free.
Does hummus burn in the oven?
Only slightly on the surface. It sets and browns lightly at the edges, which is tasty. Keep to a thin layer and do not overbake.
