Method
- 1
Mix the flour and 0.5 tsp salt in a bowl. Add the warm water, bring together and knead for 8 minutes until smooth and firm. Cover and rest for 30 minutes.
30 min - 2
Toss the cabbage with 0.5 tsp salt and leave for 10 minutes. Squeeze it hard in a clean tea towel to remove the water.
10 min - 3
Mix the cabbage with the carrot, tofu, onion, garlic, ginger, spring onions, coriander, spices, soy sauce and sesame oil until it holds together when pressed.
- 4
Cut the dough into 24 pieces and roll each into a thin circle about 8 cm across. Put a heaped tablespoon of filling in the middle, fold over into a half moon and pinch the edge shut, pleating if you like.
- 5
Brush baking parchment with the vegetable oil, prick it and lay it in a steamer. Steam in batches, not touching, for 12 minutes until the skins are glossy and slightly see-through.
12 min - 6
Stir all the dip ingredients together in a small bowl. Serve the momos hot with the dip.
