Method
- 1
Mix the flour and the first 0.5 tsp salt in a bowl. Add the warm water and bring together, then knead for 8 minutes until smooth and firm. Cover and rest for 30 minutes.
30 min - 2
For the dip, char the whole tomatoes and chilli in a dry frying pan over a high heat for 8 to 10 minutes, turning, until the skins blister and blacken in places. Cool for a few minutes, then blend with the garlic, coriander, lime juice, sesame seeds and salt to a rough, saucy dip.
10 min - 3
Mix the chicken, onion, garlic, ginger, spring onions, coriander, spices, 1 tsp salt and sesame oil in a bowl. Squeeze it with your hand for a minute until sticky.
- 4
Cut the dough into 24 equal pieces. Roll each into a thin circle about 8 cm across, keeping the middle slightly thicker than the edge. Keep the rest covered.
- 5
Put a heaped tablespoon of filling in the middle of a circle. Pleat the edge all the way round, pinching as you go, then twist the top to seal into a little purse.
- 6
Brush baking parchment with the vegetable oil, prick it with a knife and lay it in a steamer. Steam the momos in batches, not touching, for 12 minutes until the skins turn glossy and slightly see-through and the filling is firm and cooked through.
12 min - 7
Serve hot straight away with the tomato dip.
