Method

  1. 1

Make the tres leches sponge and soak the day before and chill it (see the base recipe). Cut about 600 g into 2 cm cubes with a spoon or knife.

  2. 2

Whip the cream with icing sugar, vanilla and lime zest to soft peaks.

  3. 3

Layer cake cubes, cream and berries in 6 glasses, finishing with cream and berries.

  4. 4

Chill for 20 minutes before serving.

Tips

  • Use clear glasses or jars so the layers show.
  • Spoon the cake with its soak into the glass, since the milk is the point.
  • Assemble up to 3 hours ahead; any longer and the berries weep.

Storing and freezing

Keeps 24 hours in the fridge covered. Best eaten the day of assembly.

Questions

Can I make them the night before?

Yes, assemble the cake layers the night before, then add the berries and cream on the morning of serving so they stay fresh.

What size glass?

Glasses or jars of about 200 ml work well; wide ones are easier to spoon the layers into.

Can I use frozen berries?

Yes, thaw and drain them well first; they will be softer but taste good.
