Fry the tortillas in the oil in a frying pan for 30 seconds a side until lightly crisp, and keep them warm.

  3. 3

Make four small wells in the sauce and crack an egg into each. Cover and cook very gently for 4 to 5 minutes until the whites are set and the yolks are still soft.

Serve the eggs and sauce straight from the pan, with the tortillas, coriander, radish and lime wedges.

Tips

  • Make sure the sauce is warm but not boiling. Eggs cooked in fast bubbling sauce go rubbery.
  • Cook in a lidded pan so the tops of the eggs set with steam.
  • Use very fresh eggs for neat, set whites.

Storing and freezing

Best eaten straight away. Do not store cooked eggs in sauce. The sauce on its own keeps 3 days in the fridge.

Questions

Can I scramble the eggs instead?

Yes. Soft scramble the eggs and spoon the warm sauce over them, with tortillas on the side.

Can I make this for more people?

Yes, use a wider pan and allow 2 eggs and 100 ml sauce per person.

Is it vegan?

Swap the eggs for fried tofu or roasted mushrooms and it becomes vegan.
