Method

  1. 1

Toss the pork slices in your ready made al pastor marinade (see the base recipe) until every slice is coated. Cover and chill for 6 to 12 hours.

  2. 2

Heat the oven to 200°C (180°C fan). Line a 900 g loaf tin with a double layer of foil so it overhangs on all sides.

  3. 3

Layer the pork slices tightly in the tin, tucking onion rings and a pineapple slice between every few layers. Press down firmly and fold the foil over the top.

  4. 4

Roast for 1 hour 15 minutes. Open the foil and roast for 15 minutes more until the top is charred and the pork is tender and cooked through with no pink.

  5. 5

Lift out the block on the foil, rest for 10 minutes, then slice thinly across the layers on a board. Sear the slices briefly in a very hot pan if you want extra char.

  6. 6

Warm the tortillas and serve the pork with the roasted pineapple, chopped onion, coriander, habanero salsa and lime wedges.

Tips

  • Press the layers down hard. A tight block slices neatly and stays moist.
  • Rest before slicing so the juices settle.
  • Sear the carved slices in a very hot pan for the crisp edges that a spit gives.
  • The habanero salsa is very hot. Start with a few drops.

Storing and freezing

Keeps in the fridge for up to 3 days, cooled within 1 to 2 hours. Freeze sliced pork for up to 2 months. Reheat in a hot pan until steaming hot all the way through.

Questions

Why use a loaf tin?

It mimics the stacked trompo, where layers of marinated pork turn on a spit. Pressed in a tin, the layers stay moist and slice cleanly.

Can I make it with chicken?

Yes. Layer boneless chicken thighs, roast for about 50 minutes and check there is no pink and the juices run clear.

Is it gluten free and dairy free?

Yes. Pork, pineapple, onion, corn tortillas, the marinade and habanero salsa contain no gluten, dairy, egg or nuts.
