Method
- 1
Boil the eggs for 10 minutes. Cool in cold water, peel and chop roughly with a pinch of salt.
10 min - 2
Toast the pumpkin seeds in a dry pan over a medium heat for 3 to 4 minutes until they pop and smell nutty. Do not let them brown. Cool for 5 minutes.
4 min - 3
Blend the seeds with the water, coriander and salt until smooth and pale green. Pour into a wide pan and warm gently over a low heat for 5 minutes, stirring. Do not boil or it will split.
- 4
Heat the oil in another pan and cook the onion for 5 minutes. Add the tomatoes and simmer for 10 minutes until thick. Stir in your ready made habanero salsa (see the base recipe).
15 min - 5
Warm the tortillas from your base recipe. Dip each one briefly into the warm pumpkin seed sauce, fill with chopped egg and roll up.
- 6
Place 2 rolls on each plate, spoon over more pumpkin seed sauce, then drizzle with the tomato sauce. Serve straight away.
Tips
- Warm the pumpkin seed sauce gently. Boiling makes the oils separate and the sauce grainy.
- Thin the sauce with a little more water if it thickens as it stands.
- Dip the tortillas for just a few seconds so they stay in one piece.
Storing and freezing
Best eaten straight away. Keep sauces separately in the fridge for up to 2 days and warm gently. Do not freeze.
Questions
What does papadzules mean?
The name comes from the Mayan language and roughly refers to food for the lords. It is a traditional Yucatecan dish of egg-filled tortillas with a pumpkin seed sauce.
Are pumpkin seeds a nut?
No. Pumpkin seeds are seeds, not tree nuts or peanuts, so this dish is nut free as written. Check the packet if you have a seed allergy or cross contamination worries.
Can I make papadzules ahead?
Make both sauces up to 2 days ahead and boil the eggs the day before. Assemble and warm just before serving.
