Method
- 1
Mix the masa harina and salt in a bowl. Add the water and knead for 2 minutes into a soft dough that does not stick. Cover and rest for 15 minutes.
15 min - 2
Divide the dough into 4 balls. Roll each between two sheets of baking paper into an oval about 20 cm long and 5 mm thick.
- 3
Heat a heavy frying pan or griddle over a medium heat. Cook each huarache for 3 minutes on each side, until speckled and firm, then brush lightly with oil. Keep warm in a clean tea towel.
6 min - 4
Warm your ready made refried beans (see the base recipe) in a small pan until steaming hot all the way through. Warm your ready made red enchilada sauce (see the base recipe) in another pan.
- 5
Toss the steak with the cumin and a pinch of salt. Heat 1 tbsp oil in a pan over a high heat and sear the steak for 1 to 2 minutes, until browned.
2 min - 6
Spread each huarache with beans, top with steak, then spoon over the red sauce. Finish with onion, cheese and coriander.
Tips
- Slice the steak thinly and sear it fast on a very hot pan so it stays tender.
- Crisp the huaraches in a dry pan first, then brush with oil. They hold their shape under the toppings.
- Keep the masa dough covered while you work so it does not dry and crack.
Storing and freezing
Best eaten straight away. Keep any leftover beans and steak separately in the fridge for 2 days and reheat until steaming hot all the way through.
Questions

The long, flat oval shape looks like a huarache sandal. They are a popular street food in Mexico City.
Are huaraches gluten free?
Yes. The base is masa harina, which is corn. Check your masa harina packet to confirm it has no added wheat.
