Method
- 1
Heat the oven to 220°C (200°C fan) and line two large baking trays with baking paper.
- 2
Stir your ready made chipotle tinga sauce (see the base recipe) and shredded chicken (see the base recipe) together in a pan and heat for 5 minutes until thick and hot. Cool for 5 minutes.
5 min - 3
Warm the corn tortillas (see the base recipe) in a dry pan for 20 seconds each side so they bend without cracking.
- 4
Spoon 2 tbsp of filling along one edge of a tortilla and roll up tightly. Place seam side down on the tray. Repeat with the rest, brushing each with oil.
- 5
Bake for 15 to 18 minutes, turning once, until golden and crisp all over.
16 min 40 s - 6
Mix the soured cream with half the lime juice. Serve the flautas over shredded lettuce, drizzled with the cream and scattered with queso fresco.
Tips
- Warm the tortillas before rolling or they crack. A damp tea towel keeps them soft while you work.
- Use a thick filling. A runny one makes the flautas soft instead of crisp.
- For authentic crunch, shallow fry in 1 cm of hot oil for 2 minutes each side, then drain on paper.
Storing and freezing
Eat on the day they are baked. Cooled leftovers keep in the fridge for up to 2 days and recrisp in a hot oven, steaming hot all the way through.
Questions
What is the difference between flautas and taquitos?
Flautas are usually made with larger tortillas rolled into long thin flutes, while taquitos use smaller ones. Names vary by region, so the difference is mostly size.
Can I make them in an air fryer?
Yes. Brush with oil and air fry at 200C for 8 to 10 minutes, turning once, until crisp and golden.
Can I freeze them?
Yes. Freeze unbaked rolled flautas on a tray, then bag them for up to 2 months. Bake from frozen for 25 minutes until crisp and steaming hot all the way through.
