Method
- 1
Heat the oven to 220°C (200°C fan). Wrap the tofu in kitchen paper and press under a heavy pan for 15 minutes, then pat dry and cut into cubes.
15 min - 2
Mix 80 g of your ready made guajillo adobo paste (see the base recipe) with the oil, salt and 2 tablespoons of water. Toss the tofu in it gently and spread on a lined baking tray.
- 3
Roast the tofu for 25 minutes, turning once, until the edges are crisp and dark red.
25 min - 4
Meanwhile rinse the rice until the water runs clear. Put it in a pan with the 600 ml water and a pinch of salt, bring to the boil, cover, reduce to the lowest heat and cook for 12 minutes. Turn off the heat and leave covered for 5 minutes.
17 min - 5
Warm your ready made refried beans (see the base recipe) in a pan with a splash of water.
- 6
Spoon rice into bowls and add beans, tofu, your ready made pico de gallo (see the base recipe) and avocado. Finish with coriander and a lime wedge.
Tips
- Pressing the tofu is worth the 15 minutes. Dry tofu browns and crisps, wet tofu just steams.
- Extra firm tofu holds its shape. Silken tofu will fall apart.
- For safe rice, eat it as soon as it is cooked, or cool it within 1 hour, refrigerate and reheat only once until steaming hot.
- Roast rather than fry the tofu for hands off cooking. Turn once only.
Storing and freezing
Keep the tofu and beans in the fridge for up to 3 days. Cool rice within 1 hour, refrigerate for up to 1 day and reheat only once until steaming hot all the way through.
Questions
Can I fry the tofu instead of roasting?
Yes. Fry the cubes in a hot, non stick pan for 8 to 10 minutes, turning, then add the adobo and a splash of water for the last 2 minutes until sticky.
Is this bowl vegan?
Yes. Everything in it is plant based and free from gluten, dairy, egg and nuts. Check the refried beans were made without lard.
What else can go in the bowl?
Pickled red onions, sweetcorn, shredded lettuce or a spoon of salsa verde all suit. Add them to taste.
