  4. 4

Heat the last tablespoon of oil in a second pan over a high heat. Fry the onion petals and tomato wedges for 3 minutes, just to char the edges.

  5. 5

Add the prawns and salt to the sauce and cook for 3 to 4 minutes until pink and cooked through.

    3 min 30 s
  6. 6

Stir in the charred onion and tomato and the garam masala. Top with the reserved golden onions and the fresh coriander.

Tips

  • Dopiaza means two onions. Use one cooked right down into the sauce and one added later for texture.
  • Slice the onions the same thickness so they brown evenly and do not catch.

Storing and freezing

Eat the day it is made. Cool leftovers within 1 hour, keep in the fridge up to 1 day and reheat until steaming hot all the way through.

Questions

Is dopiaza hot?

No, it is a mild to medium curry with a sweet onion flavour. Add a sliced green chilli at the garlic stage if you want some heat.

Can I swap the prawns?

Yes. Chunks of firm white fish such as cod or monkfish work well, and so do cooked mussels. Add fish for the last 5 minutes.
