Method

Heat the oven to 160°C (140°C fan). Heat the oil in a casserole over a high heat. Brown the lamb in 2 batches for 5 minutes each, then set aside.
10 min - 2
Add the onions to the pan and cook for 6 minutes over a medium heat until soft.
6 min - 3
Stir in your ready made Thai green curry paste (see the base recipe) and fry for 2 minutes. Add the coconut milk, your ready made chicken stock (see the base recipe), fish sauce and sugar and bring to a simmer.
2 min - 4
Return the lamb, cover and cook in the oven for 2 hours.
120 min - 5
Add the potatoes, stir and cook, covered, for 45 minutes more until the lamb is very tender and the potatoes are cooked.
45 min - 6
Stir in the lime juice, taste and add salt if needed. Scatter with coriander and serve with rice.
Tips
- Skim any excess fat from the top before serving.
- Browning the lamb first builds a richer flavour.
- This improves if made the day before and reheated.
Storing and freezing
Cool within 1 to 2 hours. Keep in the fridge for up to 3 days or freeze for 3 months. Reheat until steaming hot all the way through.
Questions
Can I use a slow cooker?
Yes. Brown the lamb, then cook everything on low for 7 to 8 hours, adding potatoes for the last 2 hours.
Is lamb shoulder better than leg?
Yes. Shoulder has more fat and connective tissue, so it stays tender in a long cook.
How spicy is this?
Medium hot. The long cooking mellows the chilli heat, so use less paste for a gentler dish.
