Method
- 1
Heat the oven to 230°C (210°C fan) and put two large baking trays inside to heat up.
- 2
Heat the oil in a frying pan and brown the turkey for 6 minutes, breaking it up. Stir in the taco seasoning mix and 60 ml water and cook for 3 minutes until thick.
9 min - 3
Place two tortillas on each sheet of baking paper. Spread each with your ready made salsa ranchera (see the base recipe), leaving a 1 cm border.
- 4
Scatter over the turkey, sweetcorn, red onion, jalapeños and cheese. Slide the pizzas, on their paper, onto the hot trays.
- 5
Bake for 8 to 10 minutes until the edges are crisp and the cheese is bubbling and golden. Scatter over the coriander, cut into wedges and serve.

Tips
- Heat the trays first so the base of the tortilla crisps straight away.
- Two tortillas stacked give a sturdier base if you plan to add heavier toppings.
- Use thick, well reduced salsa or it makes the pizzas soggy.
- Add the sweetcorn and jalapeños on top so they stay bright and do not steam.
Storing and freezing
Best eaten fresh. Keep the cooked turkey topping in the fridge for up to 3 days. Leftover pizzas keep for 1 day in the fridge and reheat in a hot oven until steaming hot all the way through.
Questions
Can I use corn tortillas?
Yes, but they break more easily. Brush them with a little oil and bake for 4 minutes first before adding the toppings.
Can I make them gluten free?
Yes. Use gluten free flour tortillas and check the labels on the jalapeños and sweetcorn.
Can I make these vegetarian?
Yes. Replace the turkey with 300 g of refried beans or drained black beans, and add the same spices.
