Method
- 1
Cut each chicken breast in half horizontally to make 2 thin cutlets. Season with the salt.
- 2
Heat the oil in a wide frying pan over a medium high heat. Fry the chicken for 4 minutes on each side until golden. Move to a plate.
8 min - 3
Melt the butter in the same pan. Cook the onion over a medium heat for 5 minutes, then add the garlic for 30 seconds.
5 min 30 s - 4
Add the stock and scrape up the browned bits. Stir in your ready made chipotle adobo sauce (see the base recipe) and simmer for 3 minutes.
3 min - 5
Pour in the cream and simmer for 4 minutes until the sauce coats the back of a spoon. Do not let it boil hard.
4 min - 6
Return the chicken and juices to the pan and cook for 4 to 5 minutes until the chicken is white all the way through. Reheat your ready made Mexican red rice (see the base recipe) until steaming hot. Serve the chicken over the rice with coriander.

Tips
- Simmer the cream gently. If it boils hard, it can split into a greasy, grainy sauce.
- Blend the sauce with a stick blender for a smooth, restaurant style finish.
- For a lighter sauce swap half the cream for whole milk, or use Mexican style crema or full fat creme fraiche.
Storing and freezing
Cool within 2 hours and keep in the fridge for up to 2 days. Reheat gently until steaming hot all the way through. Freezing is not recommended because the cream sauce can split.
Questions
Can I use chicken thighs?
Yes. Skinless boneless thighs are juicier and forgiving. Cook them for 6 to 7 minutes each side before building the sauce.
Can I make it dairy free?
Use full fat coconut milk in place of the cream and olive oil instead of butter. The flavour changes slightly but the chipotle comes through well.
How do I make it less spicy?
Use 60 ml of chipotle sauce and stir in an extra splash of cream at the end.
