10 min - 2
Heat the oil in a pan and fry the onion for 5 minutes until soft. Add the garlic, sweetcorn and rajas and cook for 3 minutes.
8 min - 3
Stir in the pollo deshebrado (see the base recipe) and half the lime crema (see the base recipe). Cook gently for 3 minutes until steaming hot all the way through. Season.
3 min - 4
Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side.
- 5
Fill with the creamy chicken and rajas, top with crumbled queso fresco and the remaining crema.
Tips
- If you cannot find poblanos, use green peppers plus one jalapeno for heat.
- Do not boil the crema, just warm it so it stays smooth.
- Add the sweetcorn for sweetness, a classic part of rajas con crema.
Storing and freezing
Keeps up to 2 days in the fridge. Reheat gently until steaming hot all the way through, without boiling hard.
Questions
What are rajas?
Rajas are strips of roasted chilli, usually poblano, cooked with onion and often cream. They are a classic Mexican filling or side dish.
Can I make it vegetarian?
Leave out the chicken and use extra sweetcorn and 200 g of mushrooms. This recipe as written contains chicken.
Is it very spicy?
No, poblanos are mild. Add pickled jalapeno or hot sauce at the table for more heat.
