Method
- 1
Use your ready made homemade Mexican chorizo (see the base recipe) and pollo deshebrado (see the base recipe), both out of the fridge for 15 minutes.
- 2
Heat the oil in a large frying pan over a medium heat. Add half the chopped onion and fry for 3 minutes until soft.
3 min - 3
Crumble in the chorizo and fry for 5 minutes, breaking it up, until it is cooked through and has released its red fat.
5 min - 4
Add the pollo deshebrado and the tomatoes and stir for 3 to 4 minutes until the chicken is coated in the red fat and steaming hot all the way through. Taste and add salt if needed.
3 min 30 s - 5
Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side until pliable.
- 6
Fill with the chicken and chorizo, then top with the remaining raw onion, coriander and jalapeno. Serve with lime wedges.
Tips
- Fry the chorizo before adding the chicken. The red fat it releases is what seasons the lean chicken.
- Drain off a spoonful of the fat if the pan looks very oily, but keep enough to coat the chicken.
- A squeeze of lime at the table lifts the rich chorizo.
Storing and freezing
Keeps for up to 3 days in the fridge in a covered container. Reheat the filling until steaming hot all the way through, and warm fresh tortillas.
Questions
Can I use shop bought chorizo?
Use fresh Mexican style chorizo if you can find it. Spanish cured chorizo is firmer and smokier, so dice it small and fry it a little longer.
How spicy are these tacos?
Medium. The heat comes from the chorizo and the jalapeno, so leave out the jalapeno seeds or the fresh chilli for a milder taco.
Is this dairy free?
Yes, there is no cheese or cream. The tortillas, chicken and chorizo base recipes are all dairy free too.
