Method

  1. 1

Use your ready made barbacoa beef (see the base recipe). If it is wet, drain off the excess sauce so the flautas do not go soggy. Warm the beef in a pan until steaming hot all the way through.

  2. 2

Warm your ready made corn tortillas (see the base recipe) wrapped in a damp tea towel in the microwave for 40 seconds, or in a dry pan, until soft and bendy. Keep them covered so they do not crack.

  3. 3

Put 2 tbsp of beef in a line across the lower third of each tortilla and roll up tightly. Secure with a cocktail stick or lay seam side down.

  4. 4

Heat the oil in a deep frying pan over a medium high heat to 175C, or until a cube of bread sizzles and browns in 30 seconds. Never leave hot oil unattended.

  5. 5

Fry the flautas in batches, seam side down first, for 2 to 3 minutes, turning, until golden and crisp. Drain on kitchen paper and remove the cocktail sticks.

  6. 6

Serve hot on a bed of lettuce, topped with the lime crema, radish and coriander, with lime wedges.

Tips

  • Soften the tortillas properly before rolling. Cold, dry tortillas crack as soon as you bend them.
  • Roll tightly and fry seam side down first so they hold their shape.
  • Do not overfill. Two tablespoons per tortilla is enough, or they burst in the oil.
  • Bake them instead: brush with oil and bake at 220C (200C fan) for 15 minutes, turning once.

Storing and freezing

Best eaten fresh. Cool leftovers within 1 to 2 hours and keep in the fridge for up to 2 days. Reheat in a hot oven for 10 minutes until crisp and steaming hot all the way through.

Questions

What is the difference between flautas and taquitos?

They are very similar. Flautas are usually longer and rolled from larger tortillas, and taquitos are shorter. Both are rolled and fried until crisp.

Why did my flautas fall apart?

The tortillas were too cold or dry, or the filling was too wet. Soften the tortillas, drain the beef and roll tightly, frying seam side down first.

Are flautas gluten free?

Yes. The corn tortillas, beef, lettuce and crema contain no gluten, egg or nuts. They are not dairy free because of the lime crema, but you can use a dairy free yoghurt instead.
