Method
- 1
Heat the oven to 200°C (180°C fan). Prick the potatoes, rub with the oil and a pinch of salt and bake for 1 hour 15 minutes until the skins are crisp and the middles are soft.
75 min - 2
Warm your ready made black beans (see the base recipe) in a small pan with the cumin and a splash of their liquid for 6 minutes, mashing a few against the side to thicken.
6 min - 3
Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.
- 4
Split the hot potatoes open and fluff the insides with a fork.
- 5
Spoon the beans into each potato, pour over the queso and top with a generous spoon of your ready made pico de gallo (see the base recipe).
- 6
Scatter with spring onion and coriander and serve at once.
Tips
- Bake the potatoes directly on the oven shelf for the crispest skins.
- Keep the pico de gallo cold and the rest hot for a lovely contrast.
- Check the potatoes are soft when squeezed through a tea towel before taking them out.
Storing and freezing
Best eaten fresh. Keep leftover beans and queso separately in the fridge for up to 3 days and reheat until steaming hot all the way through.
